Petrifying Pumpkin Pupcakes

Hello again my furry friends (and mummy and daddy, of course),

As you all (hopefully) know, we threw a Howloween pawty at My Vet Animal Hospital last weekend to raise awareness and fundraise for Assistance Dogs Australia. Me being me, I of course volunteered to bake.

“What would be a crowd pleaser for my furry little friends?” I thought… PUPCAKES, of course! I needed a fun twist on my regular pupcake recipe and for Howloween I thought pumpkin might be a bit of fun!

I took to the kitchen and flipped open my Fur Baby Recipe Book, found my favourite pupcake recipe and made a few tweaks here and there to give it that nice Howloween feel. Here it is!

Ingredients (for 15 medium-sized pupcakes)

-2 large eggs
-1/2 cup of smooth peanut butter
-1/2 cup of vegetable oil
-2/3 cup of honey
-2 cups of diced butternut pumpkin
-2 cups of whole wheat flour
-2 teaspoons baking soda
-2/3 cup of quick cooking oats

For frosting:

-Extra peanut butter
-Pet-friendly orange food dye (I use an all natural dye from a health food store)

Instructions

-Preheat your oven to 180 degrees celcius.

-Place your mini cupcake cups on a tray- I chose the cardboard cups so the dogs can’t eat them as easily as paper and they stood up a lot better on the tray.

-Mix the eggs, peanut butter, oil, honey and pumpkin in a large bowl- I like to use the Magimix to speed up the process and, of course, save my strength! In another bowl, mix the flour, baking soda and oats.

-Once both mixtures are ready, add the mixtures together and stir (on a very low level if you’re using anything other than your hands and a wooden spoon) until all the ingredients are mixed together.

-Divide the mixture evenly among the prepared cupcake cups, filling to about halfway. If you’re a naughty parent like me, you can let your fur baby lick the spoon afterward- Georgie loves it!

-Bake them for 15-25 minutes. Keep an eye on them of course and test whether they’re ready by pushing a toothpick into the centre and seeing if it comes out with only a few crumbs on it.

-Remove your pupcakes from the oven and let them cool on a wire rack.

-Once the pupcakes are cool, take some mix your peanut butter with the food colouring and place it in a piping bag.

-Pipe a little peanut butter frosting onto the top of each of your pupcakes.

-Voila! The perfect pumpkin pupcakes!
